Savory Sweet Potato Waffles

Ingredients:
- 1 medium sweet potato, lightly steamed and mashed
- 1 scoop collagen peptides
- 2 cage free eggs, whisked
- 2 tablespoons coconut flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sea salt
- Coconut oil or Grass-Fed Ghee for greasing
- Optional: Sliced red onion, avocado, fried eggs, fresh parsley, and/or salt and pepper to garnish
Instructions:
- Heat waffle iron to medium heat and grease well with coconut oil cooking spray or ghee.
- In a large bowl, mix together cooked sweet potato, collagen peptides, eggs, coconut flour and spices.
- Scoop batter into waffle maker and cook for 5-7 minutes.
- Remove waffle and garnish (if desired).
