Avocado Pineapple Paleo Coleslaw

Start to Finish: 20 minutes (5 minutes active)

Ingredients:

  • 1 cup diced pineapple
  • 1/2 medium cucumber, peeled, deseeded, and diced
  • 1/2 napa cabbage, shredded or thinly sliced
  • 1 cup fresh cilantro, minced
  • 1/2 avocado, diced

Dressing Ingredients:

  • 3 tablespoons apple cider vinegar
  • 1/2 tablespoon ground turmeric
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground coriander
  • 1/2 tablespoon lemon juice
  • 2 tablespoons olive oil or Brain Octane Oil

Instructions:

  1. In a large bowl, whisk all dressing ingredients together.
  2. In the same bowl, add coleslaw ingredients. Mix to incorporate, and refrigerate for at least 15 minutes before serving.
