Avocado Pineapple Paleo Coleslaw

Start to Finish: 20 minutes (5 minutes active)
Ingredients:
- 1 cup diced pineapple
- 1/2 medium cucumber, peeled, deseeded, and diced
- 1/2 napa cabbage, shredded or thinly sliced
- 1 cup fresh cilantro, minced
- 1/2 avocado, diced
Dressing Ingredients:
- 3 tablespoons apple cider vinegar
- 1/2 tablespoon ground turmeric
- 1 teaspoon sea salt
- 1/2 teaspoon ground coriander
- 1/2 tablespoon lemon juice
- 2 tablespoons olive oil or Brain Octane Oil
Instructions:
- In a large bowl, whisk all dressing ingredients together.
- In the same bowl, add coleslaw ingredients. Mix to incorporate, and refrigerate for at least 15 minutes before serving.
