Start to Finish: 12 minutes

Ingredients:

  • 1/2 cup green banana flour, sifted
  • 3-4 tablespoons coconut milk
  • 2 eggs
  • 2-3 tablespoons granulated sweetener, such as non-GMO erythritol or birch xylitol
  • 1 teaspoon paleo-friendly baking powder
  • 1 teaspoon apple cider vinegar
  • Pinch of salt
  • 1 tablespoon cacao powder, sifted
  • 3 teaspoons ceylon cinnamon
  • 1 teaspoon powdered vanilla bean, or 2 teaspoons vanilla extract
  • 1 heaping tablespoon Grass-Fed Ghee or softened butter
  • Coconut oil for greasing

Icing Ingredients (Optional):

  • 4 tablespoons melted coconut butter mixed with 1-2 teaspoons coconut oil, OR
  • 4 tablespoons coconut cream mixed with 1.5 teaspoons cacao powder, stevia drops to taste, a dash of vanilla extract, and 1/4 avocado (all blended until smooth and creamy)
  • Optional garnishes: Shredded coconut, edible rose petals, or cacao nibs

Instructions:

  1. Preheat the oven to 350 degrees. Grease a donut tray with coconut oil.
  2. Stir all donut ingredients together until evenly combined.
  3. Divide the batter evenly into the donut molds, filling until each one is 3/4 full.
  4. Bake for 8 minutes, or until donuts are cooked through.
  5. Remove the tray from the oven, then carefully remove each donut and place onto a wire rack.
  6. Enjoy warm, or cool thoroughly and top with icing and garnishes of choice (if desired).
  7. Serve these keto donuts the same day you make them -- otherwise they may dry out.
