These flourless, low-carb coconut macaroons are soft, chewy, and flavorful. And bonus — they’re fortified with collagen protein. They take just minutes to prepare and are fully cooked in 15 minutes. This keto macaroons recipe makes 9 large cookies, but feel free to make them smaller if you like. If you make them smaller, just be sure to watch the cook time. It will likely be closer to 10 minutes rather than 15, when they’re lightly browned and done.

  • 1 1/2 cups unsweetened shredded coconut
  • 5 tablespoons birch xylitol
  • 1 scoop Vanilla Collagen Protein Powder
  • 1/2 teaspoon baking powder (aluminum-free)
  • 1/2 teaspoon pure almond extract
  • 2 pastured egg whites
  • Optional: unsweetened dark chocolate baking chips


  1. Preheat oven to 325 degrees F.
  2. Place all of the dry ingredients in a mixing bowl and stir well to evenly mix.
  3. Add almond extract and egg whites and stir well to combine.
  4. Use a large spoon to scoop 9 equal servings and place them evenly spread apart on a parchment-lined (or silicone baking mat lined) baking sheet. If unlined, you will need to brush your baking sheet with oil to keep the macaroons from sticking.
  5. Optional: Top each macaroon with a few unsweetened dark chocolate chips before placing in the oven.
  6. Bake for approximately 15 minutes or until macaroons are lightly browned.
  7. Using a spatula, remove from baking sheet and allow to cool before eating.
