Magical Frozen Fudge Pops

Coconut cream, egg yolks, cacao butter, and collagelatin form the base for these rich and creamy pops. And unlike more traditional ice cream pops, they won’t give you a sugar hangover. Eat them straight out of the freezer for a low-carb, keto treat, or garnish with your favorite berries, seeds, or chopped nuts for extra flavor and crunch.

Magical Frozen Fudge Pops

Prep Time: 10 min.
Makes: 4 pops

Ingredients: 

  • 1/2-1 tbsp. unsweetened chocolate powder
  • A pinch of salt
  • 2 tbsp. Brain Octane Oil
  • 1 tsp. vanilla powder 
  • 270 ml (1 cup) coconut cream
  • 1 tbsp. Cacao Butter
  • 2 pasture-raised egg yolks
  • 2 tbsp. Collagelatin
  • Liquid stevia or monk fruit sweetener to taste

Instructions:

  1. In a small saucepan add the Brain Octane Oil, cacao butter, chocolate powder, salt, coconut cream and vanilla and heat on low.
  2. Once the mix has come to a soft simmer and all the ingredients have melted and combined together remove from the heat and allow to cool until room temperature.
  3. When it has cooled, add the liquid mix, egg yolks, and sweetener to taste to a high powered blender and blitz to combine until smooth and creamy.
  4. Pour into ice-block molds and place in the freezer until set.
  5. When you’re ready to eat them, run the molds under warm water for a minute or two or until the ice-blocks come away easily from the molds.
  6. Enjoy them as they are or simply drizzle melted cacao melts (or dark chocolate) over the top and sprinkle with edible flowers and organic berries.
  7. Enjoy immediately!
