This purple mashed cauliflower is a magical take on pureed veggies. It is simple enough to enjoy on a weeknight, yet robust and flavorful enough to wow guests at any dinner party. At the same time, this mashed cauliflower passes the picky eater test with its violet hue and buttery flavor.

The florets for this mashed cauliflower get boiled in gut-healing bone broth, then are simply pureed with butter and salt until they take on an ultra-smooth consistency. Add deeper flavor with other veggies you have on-hand, like spinach, carrots, sweet potatoes, or turnips, or add extras like roasted garlic or fresh herbs. This dish makes it easy to bring fine-dining flair to any occasion.

How should you serve this mashed cauliflower? This puree goes perfectly with just about anything: chimichurri steak, pot roast, whole roasted chicken, lamb, meatballs, and even fish cakes.

Keto Purple Mashed Cauliflower

Start to Finish: 15 minutes

Ingredients:

  • 1 medium head purple cauliflower, roughly chopped into florets
  • Chicken bone broth or filtered water for boiling cauliflower
  • 3-4 tablespoons grass-fed butter or ghee
  • Salt to taste

Instructions:

  1. Add cauliflower florets to a small saucepan. Fill your pan half full with bone broth or water.
  2. Bring heat to a boil, then reduce to a simmer and cook cauliflower until tender. (About 10 minutes.)
  3. Drain bone broth into another container to drink or use in a different recipe. If using water, simply drain and discard.
  4. Add cooked cauliflower to a food processor or blender with butter or ghee and salt to taste. Blend until completely smooth and creamy. (You can also use a potato masher, but mashed cauliflower may have lumps.)
  5. Serve warm with additional butter or ghee.
