Ingredients

  • ¾ cup coconut butter
  • ¼ cup coconut oil
  • 3 tbsp lemon juice
  • Zest of 1 lemon
  • 1 tbsp coconut cream (the thick part from a can of coconut milk)
  • 1 tbsp non-GMO erythritol or birch xylitol
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Place all ingredients in a blender and blend to combine.
  • Line a plate or dish with parchment. Scoop the fat bomb mixture out onto the parchment. Freeze for 30 minutes, or until firm enough to handle without melting.
  • Remove the mixture from the freezer, roll into balls, and chill again in the freezer until set.
  • Enjoy immediately or store covered in the fridge or freezer (freezer storage may require thawing time).
