Creamy Spiced Eggnog

Eggnog is the perfect drink to cozy up with – it’s creamy, nourishing, and full of holiday cheer.

Please note that the original eggnog recipe does include raw eggs. However, if you personally prefer not to consume raw eggs try the following method instead.

To make cooked eggnog, the only ingredient that will change is the eggs. Instead of two eggs, you’ll need 3-4 egg yolks (you won’t use the whites). Mix the egg yolks, collagen, sweetener, vanilla and spices together in a bowl. Heat your milk, making sure it’s warm but not boiling (as this will cook the egg yolks). Next, temper the egg and spice mixture by slowly pouring the warm milk over it and quickly whisk the ingredients together with a whisk or fork and then return everything to the saucepan. Cook for another 5 minutes to thicken slightly. Use a fork or a whisk to mix the ingredients through while it’s cooking. Now mix in the oil until everything is combined. Taste the mixture and adjust any of the spices or sweetener if needed. Remove from heat and place it in the fridge to chill. When it’s ready, serve the eggnog cold with a sprinkle of cinnamon, turmeric and nutmeg on top. If you put in the extra effort to make the eggnog this way, it will give it more of a custard-y texture and flavor. However, if you prefer it quick, simple, and refreshing, use the eggnog recipe below.

Creamy Spiced Eggnog

Serves 2

Ingredients:

  • 2 organic eggs
  • 1 tsp vanilla powder (or vanilla extract)
  • 1/2 tsp turmeric powder + extra for sprinkling on top
  • 1/2 tsp cinnamon + extra for sprinkling on top
  • A pinch of nutmeg + extra for sprinkling on top
  • 2 cups of coconut milk or homemade cashew, almond or macadamia nut milk (or use a mixture)
  • 1/2 cup ice
  • 1 Tbsp Brain Octane Oil
  • 1 scoop Collagen Powder
  • MitoSweet or sweetener of choice to taste

Instructions:

  1. Add all the ingredients into your blender and blitz until well combined.
  2. Taste the mixture and add more nutmeg, turmeric, vanilla, cinnamon or sweetener if desired.
  3. Pour into 2 glasses and sprinkle with a touch of cinnamon, turmeric and nutmeg. Serve chilled and enjoy.
