Strawberries & Cream Panna Cotta

Panna Cotta is a cold Italian dessert that’s usually made with dairy and served with red fruit coulis. However, I wanted to make a dairy-free, low-carb option to make it more Bulletproof-friendly. This dessert contains some incredibly nourishing ingredients, such as quality gelatin and collagen, which provide the building blocks for healthy skin, bones and joints, so you can feel even better about eating and serving a dessert like this.

This panna cotta recipe is relatively easy, it looks pretty and it’s sure to impress your loved ones. You need to wait for the strawberry layer to set before you can start the coconut layer, but other than that prep, the cooking time is minimal. I like to serve this dessert in a clear glass jar or cup so you can see all of the layers. You can also make it a day ahead of serving — just bring it out of the fridge 10-15 minutes before serving to allow it to soften slightly.

Strawberries & Cream Panna Cotta

Strawberry Layer Ingredients:

  • 1 1/2 cups of chopped organic strawberries
  • 1/2 Tbsp lemon juice
  • 1/2 cup water
  • 4 tsp Collagelatin (bloomed in 1-2 Tbsp water)

Coconut Layer Ingredients:

  • 14 oz or 1 can of full-fat coconut milk or cream
  • 5 tsp Collagelatin (bloomed in 1 Tbsp water)
  • 1 Tbsp coconut oil
  • Sweetener to taste
  • Pinch of salt
  • 1/2 tsp vanilla

Garnish:

  • High-quality dark chocolate

Instructions:

  1. Add all of the strawberry layer ingredients into a small saucepan and heat on low until the collagelatin has dissolved and the berries have collapsed.
  2. Taste the mixture and adjust the sweetness if needed.
  3. Pour the mixture into a blender and blitz to combine.
  4. Pour into 4 small glass jars, cups or ramekins and place in the fridge to set.
  5. Now add all the coconut layer ingredients into a small saucepan on low heat and allow the collagelatin to dissolve completely.
  6. Add this mixture to blender and blitz for 1 minute to combine. Taste the mixture and adjust the sweetness if needed.
  7. Pour the coconut layer mixture on top of the set strawberry layer, then place it in the fridge to set.
  8. When it’s set, grate chocolate on top.
  9. Enjoy and savor every mouthful.
