Bacon Mashed Cauliflower Recipe

Bacon Mashed Cauliflower Recipe

Maybe you’ve never thought to put a mashed cauliflower recipe on your Thanksgiving menu before, but here’s why you should.

Some people think it’s totally normal to loosen your belt and park it on the couch after your holiday feast. What if instead, after dinner, you had the energy to kick a ball with your kids or show your long-distance relatives your favorite hiking trail?

It’s not the amount of food you eat that puts you in a food coma; it’s the type. Foods that block nutrients, feed bad gut microbes, and cause inflammation sap your energy when you could be having fun with people you love.

Even when you’re avoiding foods that make you weak, you can have a satisfying holiday dinner with all the comfort-food fixings. Everyone expects to see mashed potatoes, and you can serve up a convincing substitute. With smoky bacon, this Bacon Mashed Cauliflower recipe will either fool your family into thinking it’s real mashed potatoes, or they won’t care that it’s not the real thing because it’s so much better.

You will never miss eating mashed potatoes again now that you can have this deliciously creamy, bacon mashed cauliflower instead. If your’e still looking for feast ideas, get your entire Bulletproof-friendly Thanksgiving menu here.

Bacon Mashed Cauliflower Recipe

  • 1 large head cauliflower, cut into florets
  • 4 tablespoons grass-fed unsalted butter or ghee
  • 2 tablespoons Brain Octane Oil or MCT oil
  • 1/2 tablespoon apple cider vinegar
  • 1/2 pound pastured, preservative-free bacon, lightly cooked at medium-low (not crispy — keep those fats intact), diced
  • Sea salt to taste

  1. Steam the cauliflower until tender. Drain.
  2. In a blender, blend 3/4 of the cauliflower with all other ingredients.
  3. Stir in the bacon.  Pulse until chunky.
  4. For amazing flavor, add 1-2 tablespoons of the bacon grease (as long as it didn’t smoke when you were cooking the bacon at a low temperature).
  5. Serve and enjoy!
