Fluffy Almond Flour Paleo Pancakes

Even when you’re full keto, sometimes you just want a stack of fluffy pancakes, smothered in butter (organic, grass-fed butter, of course). Dare I say this is the best keto and Paleo pancake recipe you’ll ever have? They’re so fluffy, I could die. These almond flour pancakes also get bonus points, because they can be made vegan, and of course they’re gluten-free. With just 4 net carbs per serving, this pancake recipe is also keto-friendly. 

Blending these Paleo pancakes in the blender is what helps make them fluffy, so don’t skip this essential step. Let the pan heat up on medium heat for at least 5 minutes, so it’s hot enough before you add the almond flour batter. And make sure you coat your pan well with coconut oil and turn the heat down to medium-low, otherwise the pancakes will stick to the pan making them hard to flip.

Fluffy Almond Flour Paleo Pancakes

  • 1 1/2 cups blanched almond flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon (Ceylon preferred)
  • 1/4 tsp sea salt
  • 3 large pastured eggs, room temperature
  • 1/4 cup pure coconut milk
  • 1 tbsp unsalted butter (or coconut oil)
  • 1/8 teaspoon liquid stevia
  • 2 tsp pure vanilla extract
  • 1/4 tsp apple cider vinegar

Instructions:

  1. Preheat griddle over medium heat.
  2. Place all of the liquid ingredients into your blender, then place all of the dry ingredients on top. Cover and blend on low to start, then increase to high and blend at least 1 full minute.
  3. Grease preheated griddle with butter (or coconut oil).
  4. Ladle a spoonful of batter onto the griddle to form a silver dollar size pancake (about 3” in diameter).
  5. Flip once the batter starts to bubble
  6. Repeat until you’re done with the batter!
